Potato Masala

The aromatic Potato Masala along with crispy White Dosa is a match made in heaven! The crisp dosa wrapped snuggly around the flavourful soft, warm Potato Masala...dunked into Sambar is an expereince that is simply out of this world! 

We normally try to restrict the usage of Potatoes and it has been quite some time since we relished this lovely sabzi along with crispy white dosas! This Sabzi is wonderful along with Puri | Roti too!

Potato Masala

INGREDIENTS

4 Potatoes, boiled and peeled
2 Onion, finely chopped
2 Green Chillies, finely chopped
1/2 tsp Adrak | Ginger, finely chopped
1/4 tsp Haldi | Turmeric Powder
1/4 tsp Rai | Mustard Seeds
1/2 tsp Jeera | Cumin Seeds
1/8 tsp Ajwain | Carom Seeds
8 Kadhi Patta | Curry Leaves
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp Oil
1/4 cup Water
To taste Salt

METHOD
  • Roughly crumble boiled potatoes and keep aside.
  • In a Kadhai, heat oil and add rai, jeera, curry leaves and ajwain.
  • When rai crackles add onion, haldi, green chillies and ginger. Saute till onions become translucent.
  • Add crumbled potatoes, salt and water. Mix well. Let this cook for 2 minutes on low flame.
  • Switch off the gas and transfer Potato Masala into serving bowl.
  • Garnish with finely chopped coriander leaves.
  • Serve hot.
Potato Masala is an excellent side dish along with Roti | Puri. This is the SouthIndian style of making masala and this is what we prepare for Masala Dosa. You may also add garlic as per taste and this can be incorporated while sauteing the onions.
